Gingerbread Truffles
These truffles were more than a sweet treat, Clara made them to quiet her aching heart and keep her hands busy when she missed Bastian most. Rolled in powdered sugar and filled with warm spices, they’re a little messy, a little indulgent, and absolutely impossible to resist, just ask Delia, who devoured them straight off the counter.
Ingredients:
- 1 ½ cups crushed gingersnap cookies
- 4 oz cream cheese, softened
- 1 tbsp molasses
- ½ tsp ground ginger
- ½ tsp cinnamon
- ¼ tsp nutmeg
- White/Milk chocolate (for dipping or drizzling)
- Powdered sugar (for dusting)
Instructions:
- Mix cookie crumbs, cream cheese, molasses, and spices until fully combined.
- Roll into small balls. Chill for 30 minutes.
- Dip in melted white chocolate or roll in powdered sugar.
- Store in the fridge, if Delia doesn’t eat them all first.
