Gingerbread Truffles

These truffles were more than a sweet treat, Clara made them to quiet her aching heart and keep her hands busy when she missed Bastian most. Rolled in powdered sugar and filled with warm spices, they’re a little messy, a little indulgent, and absolutely impossible to resist, just ask Delia, who devoured them straight off the counter.

Ingredients:

  • 1 ½ cups crushed gingersnap cookies
  • 4 oz cream cheese, softened
  • 1 tbsp molasses
  • ½ tsp ground ginger
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • White/Milk chocolate (for dipping or drizzling)
  • Powdered sugar (for dusting)

Instructions:

  1. Mix cookie crumbs, cream cheese, molasses, and spices until fully combined.
     
  2. Roll into small balls. Chill for 30 minutes.
     
  3. Dip in melted white chocolate or roll in powdered sugar.
     
  4. Store in the fridge, if Delia doesn’t eat them all first.
